This may look really weird, but it's really good.  I've made it many times and everyone has raved over it.  The fish doesn't absorb any oil, it retains amazing moisture from being surrounded by the oil, and the lemons take on a completely new flavor from being roasted so long.  The lemons and capers created a sort of new "tartar sauce" flavor without the fat that comes from mayo.

When I think of "candied yams" I think of those canned yams with marshmallows that are really sweet and sort of nauseating.  This recipe really appealed to me when I first saw it because it uses fresh sweet potatoes instead of yams, along with orange juice and sorghum (if you can find it) or, as I do, substitute Grade B maple syrup.

Complicated, but fabulous recipe.  Make sure you refrigerate the ribs in the sauce overnight and then remove the bones and the gristle and fat from the bones/ribs before proceeding.  It's all really worth the trouble.
