This version, by Christopher Kimball and printed in the Costco Connection, is nice because you don't fry the potatoes.  The chopped fresh thyme give them terrific flavor.

Our good friends David and Milly Katzman took us for a drive in Maine some years back and we had lobster rolls in Ogunquit.  We remember them dearly.  This recipe is close to what we remember and, paired with Kim Crawford sauvignon blanc and the Heirloom Tomato and Grilled Corn Salad, it made a great summer dinner.
